red quinoa salad

Picture
200g red quinoa – cook in water for 15-20 mins & drain

1 red onion – chopped & sweated in ghee

2 cl. garlic -  as above

1 tsp gr coriander

½  tsp paprika powder

2 fresh tomatoes – diced

1 red pepper – fined chopped

any other seasonal veggies

Mix all above ingredients & add tamari, balsamic, lemon juice & black pepper to taste.

All ingredients can be varied! For extra protein add seeds or nuts.
